Summer rolls, also known as fresh spring rolls, are one of my favorite things to order at a restaurant. They are made from rice paper wrappers rolled around fresh crunchy vegetables partnered with cold proteins, fresh herbs, and sometimes noodles. Although they are Vietnamese in origin, variations abound on the web (and in restaurants).
My favorite trick for rolling summer rolls goes against a lot of recipes (even the package) for working with rice paper. Instead of softening the wrappers in hot or even lukewarm water, I use room-temperature water.
Instead, wrap the slippery vegetables and noodles inside the lettuce. Then you can easily lay the herbs and shrimp in the wrapper and top with the lettuce roll. It makes wrapping easier, but also makes the presentation neater and the rolls easier to eat.

This particular recipe is my homage to Hanoi's classic Chả Cá Lã Vọng, a dish of fried fish seasoned with turmeric, shrimp paste, and dill that's served over vermicelli with lots of herbs and nước chấm, a staple fish sauce dressing. My simplified version is married with the summer roll for a quick and refreshing nod to an otherwise perfect traditional recipe. In Vietnam, summer roll dishes are usually served deconstructed with platters of crisp greens, herbs, and accoutrements so guests can assemble their own rolls (post COVID-19, of course). Preparing and eating a traditional meal is like sampling an important part of history, and I'm just as excited to participate in its evolution so that there are new stories to look forward to and share."

Store: These fresh spring rolls are best enjoyed immediately, as the rice paper will dry out and become brittle as they sit. If you have any leftovers, I recommend wetting a clean dish towel in warm water, draining all the excess water, and lay the towel over the rolls as shown in this video. I recommend eating the rolls within 24 hours.
